It all started when our pal Mike from Two Frays, made a surprise visit on a Friday. Before we knew it we were talking about our love for lagers and this beer was on the calendar.
If you haven’t had a Vienna Lager in a while, or ever, it might surprise you. Although it kinda looks like a Märzen, don’t be deceived. Märzen emphasizes malt sweetness and residual sugar — while Vienna Lager is dark toasty, very zippy, and finishes dry.

It was a long road of tinkering with a beer series we called “N-E, IPA Ever” to get to our house hazy “The Spins.”
We’ve missed the constant experimentation that series facilitated, so we’ve decided to pick up where “N-E IPA, Ever” left off with a new series — “Demo Reel.”
For the inaugural edition we took the “The Spins” and added the hops earlier in the brewing process to get some old-school hop zip that you don’t find often anymore. To balance it out, we double dry-hopped earlier in the fermentation process to promote bio-transformation for more aroma and amplified fruity notes.
What came out is an incredibly aromatic, fruit-forward hazy with a zippy backbone.
Notes of: Orange rind, apricot, subtle pine, and golden toast.

Parkour is a springtime beer for those who prefer an unconventional path. Bière de Printemps, or “Spring Beer,” is the light-footed cousin of Bière de Garde, combining floral and subtle lemony citrus notes with light caramel sweetness and spice character. Unlike its boozier relative, this beer is best enjoyed fresh, rather than aged.
Traces of the style date back to the late 1300s in Arras, France, where the flowering of its ingredients coincided with the first harvest of the year and a celebratory brew. Raise a glass to the mostly-sunny skies before the clouds roll in again. 5…4…3…2…

When you think of typical session beers from England, you probably imagine an amber or ruby colored beer like a Bitter.
Just the name suggests, however, the British Golden is pale in color, which is relatively unique from mainstream English beers. The resulting malt bill is kept light with flavors of fresh bread and a touch of biscuit, while putting the emphasis on a zippy hop quality.
Forgone examples of the style originally utilized English hops, but modern resurrections tend to utilize American citrus-flavored hops to maximize the refreshing experience of the beer. For us, we picked three classics: Centennial, Amarillo, and Citra.
The eclectic collection of techniques inspired the name and brand behind this beer. In 19th century Britain, Rag-and-Bone men traveled on foot, street-by-street collecting items left by the wayside and reselling them to people who give these dusty gems new life and purpose.
Notes of: Doughy malt, fresh citrus, and pleasant bitterness.
Pair with: Fish and chips, Reuben Sandwhich, grilled chicken, or prawn cocktail.

A Louisville classic, the Kentucky Common Ale reigned as a regional favorite from the Civil War until Prohibition, but has since been pronounced dead, buried, and almost forgotten. We must say, it's a strange fate for a brew that stole our hearts from the very first sip.
Think of it as a marriage between your favorite cream ale and caramely, toasty malts. This little number has a soft mouthfeel, clean profile, and a biscuity backbone.
It drinks at a nice-and-slow do-si-do to keep you on your feet all night long, but the flavor will sweep you right off 'em.

"Why put a brewery in a former department store for baby goods?" It's a free country. USA, Baby! is our not-so-subtle salute to USA Baby, the bygone business that once called our home their home. The sixth track in our "One Hop Wonder" series puts the spotlight on Cashmere.
Cashmere is a marriage of Cascade and Northern Brewer hops achieved by Washington State University in 2013. The result is a dual-purpose hop with notes of lemon, lime, and melon, which creates a very Fruity Pebbles flavor profile (if we’re being perfectly honest).
It sits on a golden-toast malt backbone, erupts with aromas from the first pour, and finishes with a well-rounded zip.

A special thanks to Trace for partnering with us to get this off the ground. We hope to collaborate again on a special edition in the future.
The second installment features blueberry and apricot. The fruit combination balances the vibrant tartness into a sessionable treat that might just have you smashing the entire 4-pack in one sitting.

Similar in body and color to an English mild, this low-alcohol brew was made to sip on through an entire evening of embarrassment-free schmoozing. Historically spiked with anise seed, our take instead taps into the awesome power of hops. Forbidden Fruit is a modern take on a peculiar historical style in collaboration with Trace. Reaching peak popularity in the late 1800s, a traditional Lichtenhainer is marked by a subtle balance of smoke and sour, with a low ABV.
We’ve reimagined that unique vehicle by uppingthe smoke and fermenting the brew on on a heaping dose of blackberry and peach purées. The result is rounder, fuller bodied, and more robust than its forebearer – providing a level of savory depth beyond a familiar fruited sour. The rewards are great, but be warned. It’s a pure coincidence that installment No. 13 in our resurrection series sports a black cat on the can art, but will you try your luck when it crosses your path? Our first-ever sour is a collaboration with our good pals at Two Frays and we couldn’t be happier.
We fermented this Gose on cranberry and just a touch of raspberry, and then conditioned it on French Sea Salt from Steel City Salt Co.
The end-result is an experience led by cranberry, followed up by punchy tartness and brought home with vibrant salinity, and a crisp finish.
You may look at the eighth installment of our resurrection series and think, “What on God’s Green Earth is a Breslau-Style Dark Schoeps?” “How do I even say that?” “Is Necromancer just making shit up now?”
That’s a good question. You have lots of good questions.
Schoeps (or Schöps) is, in fact, one of the very earliest recorded style designations – first mentioned in writing around 1550. Schoeps range in hue from straw pale to near-black, united by malt sweetness and a strong wheat presence.
Farmer’s Tan is deep brown and full-bodied with nutty, toasty malts and midnight wheat, while just enough Saphir hops and pale malts provide tasteful cover for a clean, balanced finish.
Before a hop earns its name, it's simply known by a code number. Now-ubiquitous Citra was once referred to as “HBC 394,” for instance.
In this edition we bring you HBC 630, which is known for strawberry and/or cherry candy vibes. For us, this hazy brew is teeming with fresh strawberry with tangy citrus to round out every sip.

The deadest, most forgotten style we've resurrected to date, Purl was first brewed with wormwood, a perennial most commonly known today for its presence in absinthe and the alleged psychotropic effects thereof. More recent iterations contain ingredients ranging from wormwood, to gin, to sugars, to orange peel – all foregoing ourbeloved hops.
Authenticity matters, but not tasting, "like total shit," matters more. Our take features the mild, pleasant spicy notes of Saphir hops, along with ginger, orange peel, anda touch of licorice. The result is a malty, mild English-style ale that approximates the key qualities of the original, all in a package that even uncultured swine like you can appreciate.

When a bluff is a bust, it’s time to go All-In. Our ol’ pal Bob Ross taught us that mistakes are happy accidents, and our fearless head brewer, Lauren, taught us to never dump a beer before it hits the tank. While making Poker Face, our beloved Black IPA, an old-fashioned metric system conversion SNAFU led to a jammed mash and a batch of beer in limbo.
Caramel malt, midnight wheat, rye, and black malts combine for a dark chocolate-forward, spice-driven stout with just enough body to be sopped up by that roasty finish in time for your next sip.

Every fruity, sticky note you know by heart is turned up to eleven in a beer with hop aromas that are thumping so hard, the neighbors can smell ‘em from down the street.
Hop levels here probably exceed local ordinances, but even Karen can lighten up and enjoy this one.

What could be a more appropriate way to celebrate our first year of resurrecting dead beers than with a style that was compared to death itself – even in the peak of its popularity. At 125 IBUs, it was described as “bitter as death in the gallows.” Merseburger’s 18th Century contemporaries attributed health benefits ranging from “aiding the excitement of the intestines,” to “strengthening the stomach,” to “accelerating the flow of blood,” all to the beer’s overwhelming bitterness.
Sus, but okay.
Ours starts with loads of bitter hops and gets a pleasant dose of additional bitterness from roasty malt. To round out the bitterness, we added bitter orange peel for some contrasting bitterness.
If we had to choose one word to describe this beer, we might choose, “bitter.”

Cream ale is a pre-prohibition American adjunct ale developed in the 1800s to compete with German-inspired lagers. Contrary to the name, it doesn’t contain any milk or lactose. Instead, the moniker refers to the surprisingly “rich” flavor produced from the light, drinkable, golden brew.

*Disclaimer: drinking this beer will not provide divine knowledge of good and evil. Forbidden Fruit is a modern take on a peculiar historical style. Reaching peak popularity in the late 1800s, a traditional Lichtenhainer is marked by a subtle balance of smoke and sour, with an ABV below 4%. We’ve reimagined that unique vehicle by upping the smoke and fermenting the brew on fruit. This variation includes: mango, passionfruit, and guava. The result is rounder, fuller bodied, and more robust than its forebearer – providing a level of savory depth beyond a familiar fruited sour.
The rewards are great, but be warned – life may never be quite the same again.

Kuit is a wheat beer that enjoyed centuries of popularity until the mid 1800s, when it was overtaken by a new rival: The Münster Altbier. This tart, blond “Altbier” had almost nothing in common with the German iterations we’re familiar with today, but that’s a tale for another beer.
The style evolved substantially over the years before the final Kuit brewer died in Münster in 1808. We did the mash, it caught on in a flash, and now, the beast lives again. Perle and Saphir hops join oats and wheat for a substantial, yet drinkable ale with subtle spice and floral notes.
